Lemongrass Rockfish

Prep time: 15 minutes

Serves: 4 people

Fast Prep: Cook From Frozen

  1. Preheat oven to 375F.

  2. Bake. Empty entire package of rockfish into oven-safe dish. Bake for 10-12 minutes with convection fan on until fish is just warm in the centre. You can test by inserting a knife into the thickest part of the flesh, holding it there for 3 seconds, then pressing the tip of the knife against tender skin like your wrist or bottom lip. If it’s warm, the fish is done. If it’s cool, put it back in for 1-2 more minutes.

Or Thaw Ahead: 

  1. Thaw in fridge overnight.

  2. Preheat oven to 325F. 

  3. Bake 8-9 minutes. Empty entire package of rockfish into oven-safe dish and bake until just warmed in the centre. The lower temperature oven with no fan makes it easier to cook it just right because it takes longer to overcook and you get a longer window of perfection.

  4. Enjoy! Great with steamed rice and your favorite veggies.
