Split, Broiled Lobsters

Featured in our Lobster Dinner for Two Box. If you missed the limited box, you can still order lobsters and follow this recipe.

What You will need

  • Lobsters - we like pre-cooked, frozen PEI lobsters available for home delivery from Tide to Table.

  • An oven safe pan, small frying pan and several small bowls for claw-shells and claw meat.

  • Large knife for splitting lobsters & nut crackers or clean pliers for claws

  • Recommended Accompaniments:

    • Butter with garlic, lemon zest, or tarragon

    • Green veggie for cooking: asparagus, green beans, or similar

    • Dry Cider or a White Burgundy of your choosing. A chardonnay works nicely too!

Day Before — Thaw Lobsters in fridge

What Chef Brandon’s simple, step by step instructions to split shells in half; harvest and chop claw and tail meat; and broil your pre-cooked lobsters.

 

Preparation Steps

  • Melt butter on low heat in a pan. Add minced garlic, garlic scapes, lemon zest or fresh tarragon.

  • Remove the lobster claws.

  • Use a knife, nut crackers or a clean set of pliers to crack the claws and remove the meat. Set aside.

  • Chef’s Tip: Use the back of a chef's knife, as displayed in the video, and it won't chip your blade.

  • Twist the joints to get the extra nuggets of meat there. Set aside.

  • With lobster belly-side up, carefully cut whole lobster in half, and spoon out the tomalley in the head.

  • Carefully peel out tails and set aside.

  • Rinse shells. Put left tail piece into opposite tail shell, red-side up. This shows off the beautiful colours and texture of the meat.

  • Cut claw meat & knuckles and toss it in your melted shellfish garlic butter.

  • Divide the meat and melted butter evenly into head cavities. Place in your oven-safe pan to warm next to your baking macaroni!

Chef’s Tip: Put green veg in bottom of pan first. When it comes time to cook, then add 1/2 C of water and a pinch of salt. Bring pan to boil, turn heat off and place lobster halves on top before finishing in oven for 5 minutes at 375F. The lobster is pre-cooked, so it only needs to warm!
